Baked Corn
I make this as the main dish and serving two people. However you could use it as a side dish also, and it would just serve more people.
3 tbs butter
3 tbs flour
1 1/2 cups heavy cream (I've made this with half and half and other basic milks that I have on hand)
3 eggs-beaten
2 cups corn kernels
1/2 cup plain breadcrumbs
1. Melt 2 tbs butter in sauce pan. Sprinkle with flour and mix until paste like consistency.
2. Heat milk.....pour into flour/butter paste slowly, mixing thoroughly each time you add.
3. Add in eggs and corn, mix well.
4. Pour corn mixture into greased casserole dish
5. In sauce pan melt remaining 1 tbs butter. Stir in breadcrumbs until coated. Sprinkle over corn mixture
6. Bake at 350 for about 30 minutes or until knife inserted in the center comes out clean.
Serves 2 (as a meal)
