Pumpkin Cookies With Brown Sugar Icing
Warning, just plain old goodness cookies!
For the cookies:
2 3/4 cup flour
1 tsp baking powder
1 tsp baking soda
1 1/4 ts salt
1 1/2 tsp cinnamon
3/4 tsp ground nutmeg
3/4 cup butter (1 1/2 stick)
2 1/4 cup brown sugar
2 eggs
1 1/2 cup canned solid pack pumpkin
3/4 cup evaporated milk
1 tsp vanilla
For the icing:
4 cups powdered sugar
10 tbs butter (1 1/4 stick)
1/4 cup plus 1 tbs evaporated milk (plus more if needed)
2 tsp vanilla
1. Preheat oven to 375 degrees. In medium bowl mix flour, baking powder, baking soda, salt, cinnamon, and nutmeg; set aside.
2. Put butter and brown sugar in bowl and beat until fluffy. Mix in eggs. Add pumpkin, evaporated milke, and vanilla; mix until well blended. Add flour mixture: mix until combined.
3. Drop teaspoonfuls of cookies onto a greased cookie sheet and bake for 12 minutes. Allow cookies to completely cool.
4. Make icing; Put confectioner's sugar in a large bowl; set aside. melt butter in a small saucepan over medium heat. Cook, swirling pan occasionally, until golden brown, about 3 minutes. Immediately add the butter to the powdered sugar. Add evaporated milke and vanilla; stir until smooth. spread about 1 tsp icing onto each ookie. If icing stiffens stir in more evaporated milk, a little at a time.
Recipe makes about 7 dozen.
Making 7 dozen cookies they are 1 point per cookie
Making 5 or 6 dozen cookies they are 2 points per cookie
making 4 dozen cookies they are 3 points
