Fiesta Skillet
This plate is a full size 9 inch plate and yes that is ONE serving. It is nine points for that serving. It is a lot of food! Good for those of us that likes quantity for low points!
1 lb ground turkey
1/2 cup chopped onion
1 clove garlic-minced
2 cups mushrooms (optional)
2-3 bell peppers, chopped
1 jar salsa (16 ounce)
1/2 cup fat free sour cream
4 cups coooked whole wheat pasta
In a large skillet cook ground turkey until browned. Drain. Add onion and garlic and saute' five minutes. Add mushrooms and bell peppers. Saute' 5 minutes more. Stir in salsa. Cover and cook over medium low heat for 10 minutes. Stir in Sour cream. Add pasta and stir will. Cook over medium low heat three minutes or until thoroughly heated
Serves 4 (huge servings)
