Chocolate Chip Biscotti
2 cups flour
1 tsp baking powder
1/2 tsp salt
1 oz chocolate chips
2 cups sugar
2 eggs
1 tsp canola oil
1 tsp vanilla extract
Heat oven to 325
Cream sugar, eggs, oil, and vanilla until frothy. Add dry ingredients. Stir until moistened and dough forms. Shape the dough into a 13x3 inch log on greased baking sheet.
Bake log for 30 minutes and set aside to cool for 10 minutes. Reduce oven temp to 300 degrees.
Cut warm log crosswise on a slight diagonal in to 1/2 inch thick slices. S tand slices, about an inch apart, on baking sheet and re turn to oven for 12 minutes. The centers will be soft, but biscotti will crisp when cooled
