Breakfast Burrito

4 medium whole wheat tortilla (10 inch)
1 cup canned black beans, rinsed and drained
1 1/2 tsp chili powder
1 cup fat free egg substitute
4 Tbsp cheddar cheese
4Tbs salsa
Layer tortillas between sheets of wax paper; microwave on high until warm, 25 seconds.
Spray a medium nonstick skillet with non stick spray and set over medium high heat. Add the black beans and chili powder; cook until heated through, about 5 minutes. Add the egg substitute and cook, stirring frequently, until set about 3 minutes.
Fill each tortilla with 1/4 of the egg mixture, then top each with 1 tbs cheese and 1 tbs salsa. Roll the burritos closed.
1 burrito is one serving.
