Pumpkin Muffins
1 cup flour
1 cup whole wheat flour
1 tbs baking powder
2 tsp cinnamon
1/4 tsp salt
1/4 tsp baking soda
1/4 tsp nutmeg
1/8 tsp ground cloves
1 cup canned pumpkin
1/2 cup milk
2 eggs
1/3 cup shortening
In a large bowl combine 1 cup of flour, brown sugar, baking powder, cinnamon, salt, baking soda, nutmeg and ginger. Add pumpkin, milk, eggs and shortening.
Beat until blended well. Add remaining flour.
Pour batter into greased loaf pan at 350 degrees for 60 minutes or until a toothpick inserted in the center comes out clean. Cool thoroughly and store overnight before slicing.
I make these in muffins.....cut the baking time to about 20-25 minutes.
